And at Lonely Monk Coffees we are all about fresh coffee!

Most of the coffee you purchase in the supermarket is dead. Unlike tea, coffee begins to degrade as soon as it comes out of the roaster. There is really nothing you can do about it. You may be able to delay the process a bit (flash freezing, vacuum packing, nitrogen flushed bags), but like it or not, the second law of thermodynamics is working overtime when it comes to coffee.


Just-out-of-the-roaster coffee contains approximately 900 compounds that make up the unique flavor profiles. Give fresh-roasted coffee anywhere from 12-48 hours to “de-gas” and it will blow you away with aroma, depth, nuance of flavor, and a host of satisfying tastes to enjoy. Two weeks later about 50% of those 900 compounds will have dissipated. 


Many people may not even notice that their morning cup is not that great. Why? Unfortunately most of the coffee sold in supermarkets is older than two weeks by the time you buy it. Often it is pre-ground. It is not unheard of for companies to spray aroma on their canned coffee so you have something to smell the first couple of times you open the can.

So what can you do to ensure you get the most out of your coffee? Let’s start with a list of things that enhance your coffee experience.

  • Purchase your coffee from a local, artisan roaster. That way you can be sure when it was roasted.
  • Always buy whole bean as opposed to ground coffee.
  • Store your coffee in a cool, dry space – preferably in an air tight container (contrary to popular opinion, this does NOT include the fridge, but that’s another blog).
  • Grind your coffee just before you use it. Make sure to use the proper grind for the extraction method you are using (drip, espresso, French press etc.).
  • Try using a smaller cup. The aroma and flavor will remain more intense and the coffee will still be hot when you drink the last sip. You can always pour another cup if you need more than eight to ten ounces. I drink my coffee from a six-ounce cup.


What should you avoid?

  • Super market coffee in general – it’s old and dead.
  • Pre-ground coffee. What you gain in convenience, you lose in flavor.
  • Refrigerator or freezer storage. It will hasten the degrading process.
  • 16-ounce mugs!
